I pint low-fat cottage cheese
½ C skim milk
1 TB lime juice
1 bunch cilantro, chopped
Blend in a blender until smooth.
Chill until ready to serve. Serve with vegetables.

To use on VLCD 700 Mainstay- Lunch, substitute skim milk with water. Measure out ¼ C if using on program.
