1 egg, separated

½- 1 slice diet bread

¾ C strawberries

2 oz. low-fat cottage cheese

2 pkgs. sweetener


Whip egg white, set aside. Break up bread and combine with egg yolk and just enough water to moisten, mix well. Fold in egg white. Make two 4-inch pancakes in coated skillet, cook on low heat. Mash sweetener and strawberries. Whip cheese and place on top of pancake. Top off with strawberries.
