3 lbs. ground turkey

1 ½ tsp. garlic

1 tsp. fennel

2 tsp. Italian seasoning

1 ¼ tsp. red pepper flakes

1 tsp. sage

1 ¼ tsp. salt

½ tsp. pepper


Mix all ingredients and weigh out your portions (6 oz. or 8 oz. raw). Press onto wax paper in the shape of a semi-circle (a little bigger than the size of half of a tortilla). Flatten to get an even thickness all around. Put these on a cookie sheet (do not stack them) and freeze. The next day remove from freezer and put into a freezer zip-lock bag and keep stored in the freezer. Take out your serving sized portion the night before using it to defrost. This makes 8 (6 oz.) raw patties or 6 (8 oz.) raw patties.
