6 oz. raw chicken breast, cut in half lengthwise
2 melba toast, ground fine with ¼ tsp. paprika
¼ tsp. garlic powder
¼ tsp. red pepper flakes
Lay raw chicken breast on cutting surface. Take sharp knife and cut chicken breast in half with knife parallel to the countertop. Pulverize melba toast in food processor until very fine crumbs. Add seasonings. Preheat oven to 400 degrees and line a cookie sheet with parchment paper. Spray the paper where the chicken will be with Pam. Press chicken in seasoned melba crumbs and put on parchment paper on cookie a cookie sheet. Spray the tops of the chicken breast with Pam and sprinkle on a little salt and pepper. Bake at 400 degrees for 15-20 minutes.
