Ingredients
4 ½ oz.cauliflower
2 oz. celery, finely diced
1 oz. green pepper, finely diced
½ oz. green or white onion, sliced thin
1 hardboiled egg
1 TB mustard
2 tsp. fat-free mayo
I tsp. lemon juice
Sprinkle of paprika
Instructions
Grate raw cauliflower on grater. Add remaining veggies and stir. Mix mustard, mayo, lemon juice. Add to veggies. Sprinkle with paprika and stir. Refrigerate overnight.
